The butter adds fat which makes it rich and creamy. It also helps to safely disperse the peppermint essential oil if using. You can use MCT or coconut oil instead if preferred.

This is such a delicious recipe! Thank you Katie! My husband wanted run to our local coffee shop to purchase a peppermint mocha. I quickly searched your recipes and told him I’d make him one at home. He loved it! And it’s so much healthier for him! I didn’t have liquid peppermint stevia, but used 1/4 tsp. powdered and 2 drops of our peppermint essential oil. Then followed the rest of the recipe exactly as you posted. So Delicious!!!!!!!!!!! Thank you for providing this healthy option for a cozy winter drink.

I don’t like mocha either but I use cocoa powder in smoothies. No peppermint for me as I’m nursing. Loved it! Yum! Tasted a bit like a latte.
